I tried a new recipe last night. I wanted gluten-free peach muffins. I had 4 of the most delicious peaches in my fridge and muffins sounded great. I found a recipe and started on it. There were no eggs in the recipe, but I thought they would be fine. When they came out of the oven and tasted them, they weren't what I thought. Bland and just not very good. Unfortunately I didn't taste it until the second batch went in. I put extra white sugar in the left over batter and some cinnamon. Those were delicious! It wasn't until I looked at the on-line recipe again, that I realized it was meant to be vegan. If these are vegan muffins then- yuck! I will keep my eggs. I wondered why there were no eggs in the recipe. Oh, well. The tops of the muffins are good where I sprinkled brown sugar on top. So- top of the muffin to ya!
